Paneer Falafel Burgers
Make it Falafels! Form the mixture into walnut sized balls and flatten slightly before frying. Makes approximately 12 falafels.

Ingredients:
1 can (540 mL) chickpeas, rinsed and drained 1 pkg (200 g) Tre Stelle® Paneer 2 medium onions, peeled and roughly chopped 1 cup fresh cilantro, washed, dried, and roughly chopped 1 cup fresh parsley, washed, dried, and roughly chopped 6 cloves garlic 1 tbsp ground cumin 1 tsp white pepper 1 tsp sea salt 2 tsp sriracha sauce 1 lemon zested and juiced 1/2 tsp baking soda all purpose flour to bind mixture (if it doesn’t hold together) oil for skillet 4 burger buns or dinner rolls, toasted
Instructions:
Place chickpeas and Tre Stelle® Paneer in the bowl of a food processor and process until crumbly. Transfer Tre Stelle® Paneer/chickpea mixture into a large bowl. Add remaining ingredients except flour to processor bowl and process until fine but not pureed. Add the mixture to the bowl of Tre Stelle® Paneer/ chickpeas and stir until combined. If the mixture seems wet or sticks to your hands, add flour 1 tbsp at a time. Form into four 1/2” patties. Place oil in a large non-stick skillet over medium heat and cook patties until golden brown. Serve on their own with a side salad, or top with your favourite burger toppings. Suggested toppings: Tre Stelle® Feta Cheese, tahini, tzatziki, mixed salad greens, cucumbers slices
